At Lagavulin we did the 10:30am warehouse demonstration

(20 pounds per person). The tasting of drams from five different casks is led by warehouseman Iain McArthur. He has spent a lifetime in the whisky trade and is extremely knowledgeable. The whiskies ranged from 7-33 years in age and this tasting highlights the effect of maturation in casks on the final flavor. The 22 year old whisky finished in sherry casks was far too drinkable. Traditionally whisky is matured in Bourbon casks, but currently there is a lot of experimentation going on to identify new and sustainable sources of casks.
